This fine blend of 65% Cabernet Sauvignon and 35% Merlot has a spicy fruit and cedary oak bouquet and a fruit driven palate with firm but rounded tannins and exceptional length.
Winemaker's Notes
Cabernet Sauvignon and Merlot grapes used in this blend were picked on the estate on March 15 and February 22, 2007 at a Baumé of 14.6° and 13.2° respectively. They were both plunged in open fermenters for several days, followed by several more in stainless steel tanks for malolactic fermentation. French oak barriques were used for their maturation over a two year period and then, after blending 65%:35%, 245 cases were bottled in February 2009.
