Winemaker's Notes
On February 9, 2011 a total of .. tonnes of Chardonnay grapes were picked on both the old and new blocks of the estate at a Baume of 12.8 and brought straight to the winery from the vineyard, crushed, pressed and pumped into stainless steel, refrigerated tanks for settling. The clear juice was then racked to fermenters for alcohol fermentation, 100% in stainless steel tanks. This process took 24 days. The wine was then protein and cold stabilized and subject to a fining procedure. After this the wine was filtered and ready for bottling in July 2011. ... cases were made.
