Cabernet Sauvignon 2007

This wine is a triple trophy winner (click on 'Awards' on the main menu to see details) and a classic, full-bodied Margaret River style Cabernet Sauvignon. Vibrant and complex, with a nose of ripe, mulberry-scented fruit with dusty oak overtones, the palate is well balanced. Drinking well now, it will cellar for a further 6-8 years.

Winemaker's Notes

7.057 tonnes of estate-grown fruit were hand-picked from the vineyard's 27 year old, unirrigated vines at a Baumé of 14.6° on 15th March, 2007, then transported directly to the winery, crushed and placed in open fermenters. At this stage the grape acid was adjusted and inoculated with yeast. For the following six days the crushed grapes were hand plunged and temperature controlled. The "must" (skins and wine) was then pressed and pumped to stainless steel tanks to allow secondary or "malolactic" fermentation to take place. At the completion of this process, the wine was racked to French oak barriques for twenty months of maturation. After minimum filtration, the Cabernet Sauvignon was bottled at the winery in February 2009. 438 cases were produced.
